Quarterback Christian Rider ran for two touchdowns and threw for another as the Knights, playing without Somers as a co-op partner for the first time since 2006, improved to 1-0.
Hickman put his name atop the record books with a 19-yard touchdown in the third quarter to give Ellington a 34-0 lead in the third quarter.
Earlier, it was all Rider who helped the Knights take a 28-0 halftime lead. He threw a pass that Izaiah Castro-Vega one-handed and turned into a 30-yard touchdown. Rider added a 34-yard touchdown run and a 1-yard run. John Dubiel also recovered a blocked punt for a touchdown.
Tyreik Noell capped the scoring with a 10-yard interception return. Windsor Locks fell to 0-1.
Noel led Ellington with 82 yards on 15 carries. Rider ran for 53 yards on five carries and completed 2 of 3 passes for 68 yards. He was intercepted once.
Castro-Vega and Colby Unterstein both had interceptions for Ellington. Devon Covert recovered a fumble.
